Annual Grant & Mentorship Program and Awardee Announcement – July 2021

In March, in celebration of Women’s History Month and its Live Joyously Spring initiatives, Le Grand Courtâge (LGC) introduced ELEVATE, an annual grant and mentorship program created to support and give back to female entrepreneurs.  Spearheaded by proprietor Tawnya Falkner, ELEVATE will include a rotation of partners and projects throughout the year(s) to address the challenges and needs of women. To support, give back and encourage female entrepreneurs who deserve the equal opportunity to outshine their potential and change the world.

Le Grand Courtâge is a sponsor along with White House Black Market for the 2nd annual Launch Program with Ladies Who Launch to support women entrepreneurs impacted by COVID-19. Ladies Who Launch, a mission driven, 501(c)3 that empowers women entrepreneurs to thrive by providing access to educational resources and capital programs. The 6 month-long Launch Program provides a grant, mentorship, advisory support, and amplification for women entrepreneurs. Applicants will be awarded up to $25,000 each. Falkner will also be active in the 6-month mentorship program that is created for each awardee.

By teaming up with similarly minded partners like Ladies Who Launch, and pooling our financial resources, intellectual capital, and networking communities, we will be able to provide meaningful immediate and long-term support.”

Let’s start with the most common misconception about rosé of all..

Rosé is a summer only/seasonal drink

    • It’s one of the hallmarks of summer, serving as the perfect transition wine away from winter reds and into the lighter whites that pair so perfectly with warm summer nights.
    • The French even have an expression for it – “rosé tout l’année” or in English, “rosé all year.” In France rosé sales outstrip those of white wines, making it a dominant staple in the country’s culture and cuisine.
    • While there’s nothing more refreshing then a glass of rosé on a hot summer day, there’s a reason taglines and hashtags like “rosé all day” and “yes way rosé” are trending. Rosé is enjoyed year-round!
    • 75% of consumers believe rose is year-around but the trade often refers to it as a summer beverage. Rosé wines between $10-$20 are doubling their already impressive growth from last year.

Rosé is feminine or for women only

    • Ever heard of brosé? Men are enjoying rosé just as much as the ladies! Just because it’s pink, doesn’t make it any less manly to enjoy.
      • The pink hue of rosé comes from the grapes and the length of contact between the juice and the skin of red grapes during the winemaking process. The longer the grapes’ skin is left sitting in the wine, the darker the color on the finished rosé.

Rosé is sweet

    • Rosé is versatile. Some are fruit-forward, some are floral, while others may be dry or tart; just like our Très Chic Rosé.
      • Many people think of the mass produced and super sweet white zinfandel. Sugar prevents the wine from shining. When there’s too much sugar, it masks the aromas and flavors of the wine—whether fruity, mineral, etc—which is the good stuff! We aimed to create a wine that is fresh and balanced allowing flavors and aromas like red currants and thyme come through!

People are looking for less of the familiar blush rosés which range from medium to sweet and instead are in search of rosés with more structure and complexity

    • Our new Très Chic rosé provides exuberant flavors of berries, citrus, tropical fruit with a hint of herbs and rose petal. It’s delicate with a balanced acidity.

We are often asked ‘How is wine made or more specifically, how rosé wine is made?’  For our Très Chic Rosé, we utilize a fairly typical process for French Provence style rosé wines in order to ensure the youthful, crisp wine with fruit forward aromatics that the region is known for.


  • The grapes are mostly harvested in the morning (in the cooler hours before sunrise) and are then destemmed for the fresh aromatic. Our two grape varietals are vinified separately for more finesse and purity. The Cinsault and Grenache grapes are pressed directly. Vinification is conducted in stainless steel vats and fermentations take place at low temperatures to preserve the wines’ aromatic freshness, after which the wines are aged for 3 months on fine lees and gently stirred. Our wines are vegan friendly, and we do not utilize any subtractive fining agents like egg whites or gelatin.


  • The grapes were pressed directly, and we maintain approximately 5-6 hours contact with the grape skins to yield a brilliant pale pink hue. We do not blend white and red wine as often asked by consumers, but some producers do this when they have a lot of excess wine they are trying to unload, but this isn’t really the optimal method to produce the best quality.
  • The juice was fermented at 16°C in stainless steel vats.
  • Aged for 3 months sur lie. 13% ABV

What do lees do?

As the yeast cells start to break down during the process of autolysis, they release tiny amounts of sugars (called polysaccharides) and amino acids. The presence of these compounds is sensed on our tongues and palates as a textural weightiness or increased body in the wine. White and sparkling wines aged on the lees are often described as creamier, richer, fuller-bodied, or with greater depth and complexity of flavor.

Besides the added textural creaminess, the release of fatty acids (which come from the breakdown of the yeast cell wall) adds to the aromas/flavors in a wine.

THE BLENDS – GRAPES – 70% Grenache and 30% Cinsault

Grenache wines exhibit higher alcohol and sweet, ripe red fruit flavors, often with a violet-like floral scent.  Cinsault is fruity and fresh with a hint of pepper and spice, it adds a softness and aromatics and a higher acidity to round out the blend.

  • FLAVOR PROFILE – The coastal terroir produces exuberant wines with fresh flavors of grapefruit, red berries and tropical fruit. Delicate on the palate with mineral notes and balanced acidity.
  • AROMAS – This youthful wine offers aromatics of red berries, citrus and thyme.
  • ABV – 12.5%
  • APPELLATION: IGP Pays d’Oc – Or IGP OC Indication Géographique Protégée(IGP, “Protected Geographical Region”)


  • The soil is composed of calcareous clay and the vineyards are terraced. The climate is cool for the region with considerable diurnal/nocturnal temperature differences, which allows these wines to preserve perfect balance.
  • Origin of Grenache is mainly the Gard and Cinsault is Hérault department in the Languedoc-Roussillon vineyard.


  • Superb, brilliant, pale pinkish color. Highly fresh aromatic, with delicate notes of red berries, citrus and tropical fruit.

On the palate, giving an impression of freshness and very well-balance with floral notes. Lovely length and a mineral, saline and fresh finish with character.

French Sparkling Wine Production + Wine Making Notes

French sparkling wine, what is it? How is it made? How does it taste? We’re giving you the quickest wine lesson by covering the basics with simplification. Because all you need are three fun facts to be the wine connoisseur of the friend group.

In simple terms, sparkling wine is a carbonated, fizzy wine that can be made from red or white grapes. The carbonation is a natural occurrence and the result that comes from the second fermentation process. And French sparkling wine, is carbonated wine produced from- you guessed it: France. To get an idea on how French sparkling wine is made, we’ll walk you through our production method as to how our French sparkling wine at Le Grand Courtage is made, and the winemaking notes produced from that.

For our French sparkling wine production, we wanted something crisp, light and refreshing with a perfect balance of dryness and acidity to offset the yeast and classic attributes of French champagne. Our goal was something approachable, affordable and versatile.  

HARVEST – our grapes are strategically picked earlier to yield higher acid and lower sugar, which provide more fruit components. Following the harvest they are then gently pressed.


Primary Fermentation

  • The initial base wines and the clear juice are fermented in steel tanks separately.
  • Base wines are then blended for the ‘assemblage” to produce the final “Cuvee” which is not yet drinkable due to its high acidity content.
  • The cuvée, is assembled, using wines from various vineyards, and, for non-vintage like ours, sometimes various years.
  • Maintain a constant 51 degrees to slow fermentation and produce a clean, crisp finish.

Secondary Fermentation

  • The blended base wine has yeast and a small amount of sugar, called the liqueur de tirage.
  • Yeast converts the added sugar into alcohol and carbon dioxide (CO2) bubbles.
  • The amount of added sugar determines the pressure – ours is 5-6 atmosphere.  (equals 4 car tires or 100 mi/hr).


  • Dosage added before the cork, the liquid level is topped up with liqueur d’expédition – a mixture of the base wine and sucrose.
  • The amount of sugar in the liqueur d’expédition determines the sweetness, the sugar previously in the wine having been consumed in the second fermentation.
  • Generally, sugar is added to balance the high acidity of sparkling, rather than to produce a sweet taste. 


Blanc de Blancs Brut

Chardonnay imparts depth and complexity for the overall balance while Colombard’s higher acidity provides structure, length and a pleasant minerality that is supplemented by the Ugni Blanc’s fruit profile. The Chenin Blanc lends citrus and hints of honey for a creamy texture.

FLAVOR PROFILE – Crisp, light, refreshing with baby bubbles & a hint of Meyer lemon, honeydew & soft floral notes on the finish to balance the dryness, yeast and acidity. This affordable sparkler is cuisine, cocktail and consumer friendly.

AROMAS – Hints of green apple, honeysuckle and toasted brioche.

TECHNICAL NOTES – Alcohol: 11.5%; Residual Sugar: 10 g/liter; Ferment: Steel Tank at 51° F; pH: 3.3Acidity: 4 g/100mL

APPELLATION – France: Le Grand Courtâge offers a Vin Mousseux sourced from notable terroirs such as Burgundy, Languedoc and Loire Valley. Produced in Nuits-Saint-Georges.

Brut Rosé

Chardonnay provides depth and structure to the wine, while the Ugni Blanc offers natural acidity and freshness. The light bodied Gamay provides vibrant youthful fruit expressions reminiscent of wild berries and flowers amongst the French countryside on a warm summer day.

FLAVOR PROFILE – A delicate balance of dryness and acidity lingers with flavors of wild berries and pomegranate alongside soft floral notes. Crisp, light, refreshing with delicate bubbles.

AROMAS – Bright aromas of fresh strawberry and raspberry combine with notes of lilac and violet.

TECHNICAL NOTES – Alcohol: 11.5%; Residual Sugar: 12 g/liter; Ferment: Steel Tank at 51° F; pH: 3.25Acidity: 3.7 g/100mL

APPELLATION – France: Le Grand Courtâge offers a Vin Mousseux sourced from notable terroirs such as Burgundy, Languedoc and Beaujolais. Produced in Nuits-Saint-Georges.

We created a Vin Mousseux as we believe this allows for more consistency in the style that is cuisine, cocktail and consumer friendly and offers an affordable price for French bubbles. LGC is not as light & sweet as prosecco nor as dry & yeasty as champagne – ultimately, we believe our wine style is very quaffable and consumer friendly.

I once heard someone say that people spend more time planning their vacation, than they do their life and I believe this (sadly) is pretty accurate.  The truth is if you don’t define the destination, you can’t develop the roadmap to get where you want to go.  This is where the concept of a “vision board” or “dream board” comes in.  We are HUGE fans and do them every year to set intentions and define the things which speak to our soul and bring joy.  After 2020, we can all use some new energy and vision for the future.

By putting a vision board where you can see it every day, you will prompt yourself to visualize your dreams, goals and ideal life on a regular basis. Think of it as your compass and your true north.  Many super successful people swear by them, including Oprah, Reese Witherspoon, Beyoncé, and Denzel Washington.

According to Psychology Today, mental practices (like visualization) can increase motivation, confidence, and even motor performance. In fact, in one study, researchers found that, in athletes, visualization was almost as effective as physical practice.

This Pinterest Board might provide some ideas as a launching off point.

Step 1 – Defining your Goals

Do a brief 10-15-minute brain dump of what first comes to mind as the areas of your life that are important to you right now (family, relationships, hobbies, well-being, finances). Think about what excites you – learning French, teaching yoga, traveling, buying a home in the country, taking music lessons, starting a business.

If you aren’t feeling crafty, the same exercise in a journal is very effective as well.

Step 2 – Items Needed

  • Magazines, Postcards, Stickers, Catalogs, Wrapping paper, Fabric, Ribbons, Leaves, Flowers
  • Posterboard, Foam Core Board, Large Cork Board or of preference an Art Canvas (16×20 or larger)

  • Maybe washi tapes, stickers, gems, sequins, metallic pens, crayons etc., for accentuating your board

Step 3 – Finding Inspiration

Grab yourself a cup of coffee, or a glass of Le Grand Courtâge as the bubbly helps get you in that sparkling mindset. Start cutting out images that speak to you and gathering ‘visuals’ of things that align with the objectives that you’ve identified. You will amass quite the pile of things that inspire you. Be creative. Include not only pictures, but anything that speaks to you.

IMAGES: Find pictures that represent or symbolize the experiences, feelings, and possessions you want to attract into your life.   Focus on how the images make you FEEL.  Look for those that immediately make you say, “Yes! That is what I want in my life!”  

MOTIVATIONAL WORDS: Add affirmations, inspirational words, quotations, and thoughts.  I like to add words that describe how I want to feel – such as: joyful, abundant, fearless, free, balanced etc.

You are dreaming about creating a life you love so don’t rush it… set aside an evening or weekend day.  We often do ours over a few days.

Step 4 – Laying out & Creating your board

Use only the words and images that best represent your purpose, your ideal future, and words that inspire positive emotions in you and make your heart sing. There is beauty in simplicity and clarity.

Start to lay out your images on your board. But DON’T GLUE YET! It is easier to lay images out on the board so you can re-arrange until you have fit all the items.   We often overlap and layer portions of images above or below others, so we wait before gluing the edges down.

When you’re happy with the final layout, start gluing down all the edges. You might want to place some books or magazines on top to keep the images flat as it dries.

You might even consider a board for your personal goals and another for career and financial goals.  Whether you call it manifestation, a law of attraction or just bringing clarity to what you want, it is a creative exercise to do alone or with friends – and a nice alternative to all the binge watching we’ve all partaken in during COVID-19.

Write the date on the back of your vision board and your location so you can go back and remember where you were and what you were doing at the time.

Take a few moments to contemplate your vision board every day.  Keep your eye on the prize (or rather your dreams in this case).  We take a picture and save it as the screen saver to constantly reminds us.  It brings us back to center and helps maintain that champagne state of mind!
