Champagne and sparkling wine are really one of the most versatile wines for food as it contains high levels of acidity and a small amount of sugar. The two extremes complement elements in almost any food, from tame poached salmon to red-hot Thai food. Often referred to as the scrubbing bubbles for your palate as it cleanses the tongue and balance

Spritzy bubbles refresh the palate that acts as a cleanser (aka the scrubbing bubbles for the palate), getting you ready for the next burst of flavor. Bubbles work particularly well with fried and spicy foods, helping to cut through the fat and tame heat.

Champagne or sparkling wine has racy acidity, and that trait is very food friendly as it is balanced by fat, salt, and sweet flavors. The acid in bubbly balances out salty foods well, making it a classic pairing for oysters and any sort of snacky foods like salted nuts, french fries, and popcorn.

Like any wine, Champagnes range from sweet to dry. Here are the labels to look for:

  • Demi-sec – The sweetest of Champagnes, but not as sweet as a dessert wine. It means “half sweet.”
  • Dry – A shade drier than demi-sec.
  • Extra dry – One-step drier.
  • Brut – The driest form, and the most typical/popular.

Some styles

  • Blanc de Blancs is made only with white grapes. It generally goes well with lighter foods, such as seafood and vegetables. Also good as a pre-dinner aperitif.
  • Blanc de Noirs, made solely from red Pinot Noir and Pinot Meunier grapes, with a deeper golden color than the Blanc de Blancs. It makes a great pairing with full-flavored or rich foods.
  • Rosé. The color comes from the addition of Pinot Noir wine at the second fermentation, the point at which still wine becomes Champagne. This type is one of the best to have with dinner, according to Ed McCarthy, author of Champagne for Dummies.

Eras Tour Paris: The Venue

The concert is being held at the Paris La Défense Arena in Nanterre, a western suburb of Paris. With a seating capacity of 40,000, it’s a good-sized stadium, but not nearly as overwhelming as some of Taylor’s other recent venues like Lumen Field, which drew over 70,000 attendees.

Lavender Haze

  • 1 oz gin
  • ½ oz lemon juice
  • ½ oz lavender simple syrup
  • Lemon twist
  • Le Grand Courtâge Blanc de Blancs Brut

Make simple syrup: In a small saucepan, heat water and lavender sugar, stirring until sugar is dissolved. Remove from heat and let cool. Stir in lavender extract. Pour into a glass jar and chill until ready to use. In a shaker filled with ice, combine gin, lemon juice, and simple syrup. Shake to combine. Strain into a glass and top with brut. Garnish with a lemon twist. Serve immediately and enjoy responsibly.

Love Story

  • Le Grand Courtâge Brut Rosé
  • 6 tbsp strawberry purée
  • 2 tbsp simple syrup
  • 1 oz vodka
  • Strawberry sorbet

In a glass, mix purée, simple syrup, vodka, and brut. Top with a scoop of sorbet. Serve immediately and enjoy responsibly.

All Too Well

  • 1 bottle Très Chic Rosé
  • 2 cups juiced pink grapefruit
  • 1 cup soda water
  • ¼ cup honey
  • 4 sprigs fresh rosemary
  • 4 leaves of basil

Combine the wine, pink grapefruit juice, honey, soda water, fresh basil and rosemary in punch bowl. Stir well until combined. Add 2-3 ice cubes in each glass and fill with punch. Garnish with some fresh rosemary and enjoy responsibly.


  • 1/2 cup Le Grand Courtâge Blanc de Blancs Brut
  • Ice
  • 1 tbsp pear vodka
  • 4 ½ tsp Lemon Verbena Simple Syrup
  • 1 tbsp fresh lemon juice
  • Pear slices

Fill a cocktail shaker with ice. Add vodka, syrup, and lemon juice. Shake, and then strain into a glass. Top off with brut. Garnish with lemon verbena or pear slices. Serve immediately and enjoy responsibly.

The New Romantics

  • 3 Strawberries, chopped
  • 1 Tsp Freshly Squeezed Lemon Juice
  • ½ Tsp Honey
  • 1 oz Silver Tequila
  • 4 ½ tsp Lemon Verbena Simple Syrup
  • 4 oz Très Chic Rosé
  • Strawberries & peach slices for garnish

In the bottom of a glass, muddle strawberries, lemon juice & honey. Add crushed ice and tequila.
Muddle again. Top with rosé, strawberries and peach slices.

Fearless (Low ABV Cocktail Recipe)

  • 1 ½ oz gin or alcohol free gin alternative
  • ¾ oz elderflower liqueur
  • ¾ oz lemon juice
  • 1 dash orange bitters
  • 3 oz Le Grand Courtâge Blanc de Blancs Brut
  • Lemon twist, for garnish
  • Ice

Fill a cocktail shaker with ice and add gin, elderflower liqueur, lemon juice and bitters. Shake until chilled, about 30 seconds. Pour into a champagne flute and top with brut. Garnish with a lemon twist and serve. Enjoy responsibly.

We Never Go Out Of Style (Party Punch)

  • 1 (12-oz.) can frozen pink lemonade concentrate, thawed
  • ¼ cup orange liqueur
  • 4 cups white cranberry juice cocktail
  • Le Grand Courtâge Blanc de Blancs Brut
  • Fresh mint sprigs

Stir together lemonade concentrate and cranberry juice cocktail in a large pitcher. Cover and chill at least 1 hour or up to 24 hours. Stir in brut and liqueur just before serving. Garnish, if desired. Serve immediately and enjoy responsibly.

  • ½ cup sugar
  • ½ cup water
  • 1 bunch fresh mint
  • 2 – 3 cups freshly squeezed grapefruit juice
  • Edible flowers, for garnish

In a small saucepan, bring sugar, water and mint to a boil. Simmer until the sugar is dissolved, 3 minutes. Remove from the heat and let cool completely, discard mint sprigs. Divide simple syrup and grapefruit juice between 6 glasses and stir. Top with champagne and garnish with edible flowers. Serve immediately and enjoy responsibly.


  • 1 cup blueberries
  • 1 cup pineapple juice
  • 2 tsp chopped mint leaves
  • Superfine sugar, as needed
  • 1 bottle Le Grand Courtâge Brut Rosé

Purée blueberries, pineapple juice and mint in a blender. Taste for tartness. If needed, blend in sugar to taste. Strain.Pour 2-3 tablespoons juice into flutes and slowly top with brut. Serve immediately and enjoy responsibly.

  • 1 Bottle Très Chic Rosé
  • 1 Cinnamon stick
  • 4 Cloves
  • ¼ tsp Nutmeg
  • 1 tsp Sugar
  • Apple or Pear Slices
  • White raisins, cranberries,
  • or cloves for garnish

Heat the wine on low-medium heat. Do not boil it, just warm the liquid. Add the ingredients, and let the sugar melt. Warm for at least five minutes. Fifteen minutes will make the wine spicier. Add fruit slices and garnish with white raisins, cranberries, or a clove for a festive touch.

It’s New Year’s Eve and your guests are about to arrive when you go to pull your bottle of bubbly from the fridge and think… “I have no idea how to serve this Sparkling Wine or Champagne” or even, “How the heck do I even open this thing”.  Worry not, we have all the tips and tricks for you to enjoy your favorite bubbly, because we all know hearing the pop of a champagne cork is the universal sound of happy!

Store the bottle in the fridge the night before, storing your wine in the fridge for too long can dry out the cork and alter the taste due to lack of humidity. Once out of the fridge let it sit out and warm up naturally to the ideal cellar temperature which is around 55 degrees. When wine gets to this temperature all the aromas come out and you can really pick apart the different flavors in the wine.


We know it looks really cool to pop the cork, but if you want to look like a true professional, take off the cage, put a cloth over the cork and your thumb on top, then gently twist the bottle until the cork is out (quietly) and without the load *pop*.  That said, we always say the pop of the cork is the universal sound of happy, and well, it’s hard to resist as it sets the scene and makes people smile.

The reason you pour at 45-degree angle is so that the bubbles will hit a larger surface area of the glass, and it will reduce overfill and the bubbly over effect.


Pro tip: if you only fill your glass halfway, you will always have cold bubbles and never have to worry about overfill. We are fans of super chilled bubbly so refill often vs topping it off.

While the typical champagne flute is the go-to for Sparkling wine in America, it actually represses the aroma of the wine by having such a narrow top, so if you want to enjoy your wine, opt for a wider top.

In Italy Sparkling Wine is served in a white wine glass. This is because just like still wine, the more sparkling wine breathes, the more expressive it becomes on your palette.

The coupe is always a classic and evokes a nostalgia of a bygone era.  Rumor has it by some that it was modeled after Marie Antoinette’s breast – she drank copious (our coup-ious pun intended) amounts of the bubbles and had a flair for the extravagant.

We find that the Tulip is a nice compromise or mid-point between the glass styles and offers a nice elegance and a wider mouth.


The bubbles are a naturally occurring feature in the bottle due to the secondary fermentation and the carbon dioxide which builds up and doesn’t escape since it is under pressure.  That said, the abundance of bubbles in a glass is enhanced by the nucleation points which occur from contact with the glass.  Thus, the greater the surface area of glass, the greater the impact on the bubbles.

The nucleation points are small defects in the glass that trap tiny vibrating pockets of carbon dioxide. Dissolved gas in the champagne or sparkling gradually collects in a vibrating bubble inside the defect, causing it to grow and soon expel gas from the defect, forming another bubble that sticks to the outside of the defect.

Additionally, micro-fibers from dish clothes used to buff the glasses and such also can form and create or entrap a tiny air pocket when Champagne is poured,” said physicist Gerard Liger-Belair. “Then, this tiny air pocket literally sucks the [dissolved] carbon dioxide.” The gas bubbles grow inside the fibers, detaching from them once they reach the tip of a fiber.

Simple, Easy, & FUN!

White & Milk Chocolate Fondue By Christina Lang of Dessert For Two


Chocolate fondue:

♥  5 ounces chocolate (chips or chopped chocolate)
♥  1/3 cup half and half

White chocolate fondue:

♥ 5 ounces white chocolate (chips or chopped chocolate).
♥ 1/3 cup half and half

For serving:

♥ Baguette cut in cubes
♥ Pretzels
♥ Fresh pineapple
♥ Strawberries
♥ Cream cheese cut in squares
♥ Marshmallows
♥ Cookies
♥ Your favorite things!


Place each type of chocolate chip into serving container. Heat the half and half in a microwave-safe dish until boiling. Keep an eye on it so it doesn’t boil over! Pour the half and half over each dish. Let it sit for 1 minute without stirring. Stir the mixture together until it is smooth and creamy. At first, it won’t look like it will come together, but it will! Keep stirring! Serve each fondue with fresh fruit, cookies, and marshmallows. Enjoy!
